Forget those that say there is some "secret" to making great tempura--it's all in this flour--anyone can now make crispy, light tempura using this tempura batter. Just add water and make a lumpy (not smooth) batter. Don't overmix the batter and use immediately. Use hot oil (only vegetable oil) and fry quickly. For frying ingredients that may splatter and splash, coat in flour first before dipping in batter.
