Japanese Cooking Basics arrow Bonito Flakes

Bonito Flakes

Price: $3.50

Bonito Flakes are one of the main ingredients in making Japanese stock or dashi, the basis of all Japanese food including miso soup. Contains 5x3gram packs for convenient use.

Try not to use the instant powdered bonito stock as it makes a big difference to the flavour of your dishes.

Make a big batch of real dashi and freeze as ice cubes, then you can thaw small amounts, even for individual miso soup.

These fine flakes are also suitable for toppings on fried tofu (agedashitofu) , okonomiyaki (Japanese pancakes) , ohitashi spinach.
Or just stir fry eggplant or capsicum with a dashi of soy sauce and mirin, and in the final seconds, stir in a handful of bonito flakes.

Why is Japanese food yummy? Because of the UMAMI in dashi-click here to find out more...
