Classes in 2008:

Our classes are for people interested in cooking Japanese food at home, not suitable for chefs. The Kaiseki classes are for people who have had some experience cooking Japanese cuisine, and are familiar with kaiseki.  

All classes are one-off, one-day sessions from 10:00 a.m. until about 2 p.m.; held in Chatswood, Sydney; small, about 8 people, so very hands on. Dishes are traditional, and we emphasise the basics so you can go home and re-create, or create versions of your own, so ingredients, method, presentation and Japanese eating etiquette will feature.

 

Februrary 9th or 10th:  Makimono (nori rolls)--you will learn how to make the traditional norimaki as well as improvising more "global" versions. The menu will include a number of different nori rolls as well as accompaniments (eg. gari or pickled ginger) and soup. $95 repeated in August

March 8th or 9th: Yakimono (grilled dishes)--you will learn the basics of grilled fish, meat and vegetables and some of the basic sauces that feature in Japanese yakimono such as Yuan marinade, Teriyaki sauce, Miso marinade...The menu also includes accompaniments such as Aemono, rice and soups. $95 

March 16th: Yakimono (grilled dishes) Extra Class as we've had so many enquiries 

April 12th or 13th: Autumn Menu Kaiseki. $120 (Ann Bartlett, winner of Menu for Hope joins us for this class)

May10th or 11th: Agemono (fried dishes)--why is grated daikon or shredded cabbage served with Japanese fried food? You will learn this and other secrets of Japanese healthy fried food including crispy tempura, kawariage and sauces and accompaniments. Rice and miso soup will be included in the menu. $95

June 14th or 15th: Tenshin-Japanese Tapas--a succession of traditional dishes to share around the table. Tenshin is experiencing a revival in Japan. An easy yet beautiful way to wow your friends at dinner parties. $120 

July 12th or 13th: Winter Menu Kaiseki $120

August 9th or 10th: Makimono (nori rolls) repeat of February, 2008 class--you will learn how to make the traditional norimaki as well as improvising more "global" versions. The menu will include a number of different nori rolls as well as soup. This is a repeat of our February class, back by popular demand. $95

September 13th or 14th: Spring Menu Kaiseki $120

Additional Class September 21st; Spring Menu Kaiseki $120 We've added a new class due to popular demand..

October 11th or 12th: Noodles--soba noodles, udon etc. and their complex soups and dainty accompaniments. $95

November 8th or 9th: Summer Menu Kaiseki $120
